Broccoli Cheese Soup 12/28/2011

Our current, freakishly warm winter weather hasn't exactly motivated me to whip out the comfort food recipes I have been stockpiling since spring!  I decided that in the case of this soup, we could just pretend it had been a cold winter day in central Indiana.  

I particularly enjoyed this version of broccoli cheese soup because of the rich flavor created by combining swiss cheese with the sharp cheddar.  I used fresh broccoli and took the original source's advice in steaming it in the microwave while preparing the rest of the soup.  It was perfectly tender and easy to handle.  I did also cut my broccoli in larger chunks to make sure that it would keep its form once mixed into the soup.  In all honesty, it was incredibly quick to throw together and would be a perfect choice as a weeknight meal.  We paired it with a large garden salad and some fresh breadsticks.  I even doubled the recipe to ensure that there would be some leftovers to reheat for lunches in the coming week.  It's a rich soup and there was more than enough to go around!

Broccoli Cheese Soup
Serves 4

Ingredients:
1 3/4 cups chicken broth
1 small onion, diced
1/3 cup all-purpose flour
1/4 cup butter
1/2 teaspoon pepper
1/2 teaspoon salt
2 cups milk
1 1/2 cup shredded sharp cheddar cheese
1/2 cup shredded swiss cheese
3 cups chopped, lightly steamed broccoli

Directions:
Simmer the chicken broth and chopped onion for 15-20 minutes in a small saucepan, until the onions are soft.  Heat the milk in the microwave for 1-2 minutes.  In a separate medium sized stockpot (I used a dutch oven), melt butter then add flour, salt, and pepper.  Cook together, stirring constantly, for 2 minutes.  Whisk in the warmed milk.  Stir and heat together on medium heat until the soup starts to thicken, about 5-8 minutes.  Add warmed chicken broth and continue to stir until well blended.  Add cheeses and stir until completely melted.  Stir in steamed broccoli.  Add more salt and pepper to taste.  Serve immediately in bowls or bread bowls.

Your soup looks delicious and perfect for this time of year! Plus, I'm always looking for quick, weeknight meals...bonus! I'm making my grocery list right now and am adding these ingredients--just hoping I can get by with sneaking in the swiss cheese ;)
